Gluten Free Pizza Crust

Yes it's got a few exotic
ingredients, but it is one way to make a gluten free pizza
crust.
2/3 cup
bean flour
1/2 cup tapioca flour
2 tablespoons dry milk
powder
1 tbsp. gluten-free
yeast
3 tsp. xanthan gum
3/4 tsp. salt
2/3 cup warm water
1/2 tsp. sugar
1 tsp.vegetable oil
1 tsp. vinegar
Add all
dry ingredients together in a kitchen mixer and combine well.
Stir in liquids while beating on medium speed. A stiff dough
should form. Press gluten free pizza crust dough onto a pizza
pan sprayed with cooking spray. Prebake this crust for about 10
to 12 minutes at 350 degrees, before topping with sauce and
other toppings. Bake an additional time in the oven until crust
turns slightly brown on the bottom.
